It’s a Winner Every Time – Pan Fried Catfish

You’re Going to LOVE IT, and They are TOO. Them Flavors BABE

This recipe provides so much flavor that it only requires a slight change in how you cook your catfish.
After you pan-fry fish with the bacon drippings, you will always be wanting it cooked this way.
This is the simplest way to pan fry some fish filets. The taste of the bacon drippings gives it a different favor that is really good. This is one of my go to recipes that I prepare at least once a month. Enjoy!

TIP*I always cook extra bacon drippings in another pan to have some ready, just in case I need to add more drippings while cooking the fish.

Serving 2-4

INGREDIENTS

4-8 slices of bacon

½ cup of cornmeal

½ tsp of salt

2 teaspoons of your favorite salt free seasoning

(*I tried cajun seasonings with mine)

4 catfish fillets

MAKE AHEAD TO SAVE TIME

Have the fish cleaned, the scales removed and cut in fillets. The fish can be stored in the refrigerator a day before making this recipe. I did this the day before, so it would save me some time.

STEP BY STEP INSTRUCTIONS

1. Clean the fillets and make sure the scales are removed. Pat dry the fish on both sides to remove any excessive water, that is on the fillets after they have been cleaned.

2. Mix the cornmeal and the next two seasonings listed in the recipe.

3. Dredge the fillets in the corneal seasoning mixture and place them on a plate.

4. Prepare the bacon drippings by frying the bacon in a pan. After the bacon is

done remove the cooked bacon. Leave about 2-3 tablespoons of bacon drippings in the pan.

5. Place two pieces of fillets in the pan with the bacon drippings to start cooking them.

6. After 4-5 minutes turn the filets over to cook on the other side.

7. Cook for another 4-5 minutes and check to see if it is done or to your liking.

8. You can use a food thermometer to check to see if the fish is done.

It’s that simple.

Serve with the fresh garlic green beans, homemade coleslaw, cornbread, and the five-flavor pound cake. Everybody that I cook this for loves this recipe. Be prepared because they will be asking – When are you going to make some more catfish?
