INGREDIENTS

  • 3 cups all-purpose flour
  • ½ teaspoon baking powder
  • 1 cup milk (can substitute ½ cup of buttermilk and ½ cup of half and half)
  • 1 teaspoon coconut extract
  • 1 teaspoon rum flavored extract
  • 1 teaspoon butter flavored extract
  • 1 teaspoon lemon extract
  • 1 teaspoon vanilla extract
  • 3 cups white sugar
  • 1 cup butter, softened
  • ½ cup shortening (I use butter flavored shortening)
  • 5 large eggs

Five Flavor Glaze

  • ½ cup white sugar
  • ¼ cup water
  • ½ teaspoon coconut extract
  • ½ teaspoon rum flavored extract
  • ½ teaspoon butter flavored extract
  • ½ teaspoon lemon extract
  • ½ teaspoon vanilla extract

STEP BY STEP INSTRUCTIONS

1. Preheat the oven to 325 degrees F. Grease a 10-inch tube pan.

    2. Cream sugar, butter, and shortening in a large bowl with an electric mixer until light and fluffy.

    3. Add eggs one at a time, beating well after each egg.

    4. Add all of the extracts.

      5. Combine flour and baking powder in a medium bowl.

      6. Beat in flour mixture alternately with milk in batches, starting and finished with the flour mixture.

        7. Pour the mixture into the prepared cake tube pan.

          8. Bake in the oven until a toothpick inserted into the center comes out clean for 90 minutes. Cooking time can vary by stove – 1 1/2 to 1 3/4 hours.

Cool in the pan on a wire rack for 10 minutes.

              GLAZE

Combine sugar, water, and extracts in a saucepan. Bring to a boil, stirring until the sugar is dissolved.

              1. Turn cake out onto the wire rack and place waxed paper under the rack to catch glaze drippings. Spoon the glaze over the top of cake.
              2. The dripping on the cake will look different depending on if you put the drippings on a warm cake or a cake that already cooled.

              REMINDER/TIPS

You can wait longer for your cake to cool down prior to dripping the glaze over the cake.
