Have you ever cooked a pound cake, and it rose too much or spilled over the top and into the oven while it was baking. These happen to just about all bakers when they are in the process of learning how to make a pound cake. Over the years I make many different flavors of pound cakes. Regardless of which flavors you make, it is always nice when it comes out looking like the picture above. I call it a picture-perfect cake.
Before I started doing this, I would have cake batter that would spill over the top. There were times when I would have to cut part of the bottom of the pound cake off so that the cake would be even on the plate. For a long time, I would butter the pan, shake some flour over it and then pour in the cake mixture. After I made some changes my pound cakes stared looking a lot better.
TO ACHIEVE THIS LOOK, IT IS QUITE SIMPLE.
- Make sure you use a pound cake pan that is big enough for the cake mixture that you have.
- Measure your cake mixture one time in a measuring cup, so you can know how many cups need to be poured into the cake pan. Every time I make the famous five flavor pound cake I always have too much batter. I usually end up making a few cupcakes with the extra batter.
- Don’t fill the pound cake pan all the way up to the top. Since the cake is going to rise you need to leave some space for that. I usually fill it up like the second picture below.
- I have a baking notebook in my kitchen. For each pound cake pan I have the amount of cups for the batter that needs to be poured in the pan, or I have a mark that I only pour up to a certain line on the pan.
- Coat the pan with some spray what includes flour. Make sure it is for baking cakes. I used Pam Spray with Flour.

- This spray will not cause the cake to have any flour marks on the outside after it is done.

This always works for me, and I don’t have to cut any off of the cake so it will set correctly on the plate. It always looks so nice and neat — like a picture. When I used the spray for the cake pan, I wondered what took me so long to figure this out. Sometimes it is hard to change the way you do things. You will not see me buttering and flouring a cake pan again. Plus, it helps decrease my clean up and prep time.

After spraying the pan and pouring the cake mixture in the pan place your cake your cake in a preheated oven and bake for the amount of time that is listed in the recipe.
